Chicken Stroganoff with penne and beans | less than 30 minutes

Chicken Stroganoff with penne and beans recipe

 INGREDIENTS

  • 1kg chicken thigh fillets from Lilydale, cut into 5cm pieces
  • 2 tbsp all-purpose flour
  • 1 tbsp sweet paprika, to taste with salt and pepper
  • 400g sliced mushrooms
  • 1 tbsp sunflower or canola oil
  • 25 gram of butter
  • 1/2 cup white wine 
  • 2 sliced brown onions
  • 1 tablespoon of tomato paste
  • 2 tsp mustard (Dijon)
  • 1 quart chicken broth
  • 500g penne pasta, dry
  • 150g trimmed green beans, cut to the same length as the penne
  • sour cream, 150 mL
  • 2 tbsp parsley, finely shredded, to serve


METHOD 

1- In a large mixing bowl, combine the chicken, flour, paprika, salt, and pepper.

2- Cook the mushrooms in the microwave for 4 minutes.

3- Heat the oil in a very big covered frying pan over medium heat. Sauté the chicken until gently browned, then add half the butter and fry the onions until softened, about 3 minutes. Add the mushrooms and cook until they begin to brown.

4- Season with salt and pepper after adding the wine, tomato paste, and mustard. Bring the chicken stock to a low simmer. Cover and cook for about 15 minutes on a low heat.

5- In the meantime, cook the pasta until just al dente in salted boiling water, adding the beans for the last minute or two of cooking time. Drain the potatoes and mix them in the remaining butter.


6- Remove the chicken pan from the heat and whisk in the sour cream; season with salt and pepper to taste. Serve with the spaghetti and beans, and a sprinkling of parsley on top.
